Stuffed Tomatoes With Tuna  Recipe

Spanish-style stuffed tomatoes with tuna, olives, and parsley create a tasty gluten- and dairy-free pescatarian meal. This nutritious and tasty dish maximizes summer garden tomatoes!

Ingredient

– 1 tablespoon extra virgin olive oil, plus more for greasing the pan – 4 large tomatoes, like beefsteak, on the vine, or heirloom  – 1 teaspoon kosher salt, divided – 1 small white or yellow onion, diced – 2 cloves garlic, minced – 2 (5-ounce) cans quality tuna packed in olive oil, drained and roughly flaked – ¼ cup chopped green olive – 2 tablespoons finely chopped fresh parsley – 1 tablespoon lemon juice – Black pepper

Direction

Warm the oven up to 375 F. Spread a little olive oil on the bottom of a square baking dish that is 8 or 9 inches in size.

A serrated knife cuts tomato tops. You may discard or use them as lids. Scoop meat using spoon. Scoop out the meat and liquid on the chopping board, chop it, and fill a small dish.

Put a small amount (⅛ teaspoon) inside each tomato. While you make the filling, turn the tomatoes over on a plate so that they can drain.

In a large nonstick skillet, heat olive oil on medium. Cook the onion for 10 minutes, turning periodically with a wooden spoon, until softened and transparent. Add garlic and sauté 30 seconds until fragrant.

Add the conserved tomato juice and meat. Season with the remaining ½ teaspoon of salt. Cook undisturbed for 5 minutes to evaporate most of the liquid.

Put the pan away from the heat and add the lemon juice, olives, tuna, etc. Add black pepper that has just been ground to taste.

Place tomatoes equally in the buttered baking dish. Fill the tomatoes evenly and mound the tops. Saved tomato tops may be used on the filling.
