Roasted Garlic Pumpkin Hummus Recipe

No matter your cooking skill level, you've probably made hummus. Easy to make, made with simple ingredients, and versatile. Hummus is a popular dip, spread, and condiment.

– 1 head garlic – 2 tablespoons + 1 teaspoon olive oil, divided – ¾ teaspoon salt + ⅛ teaspoon salt, divided – 1 (15-ounce) can chickpeas, rinsed and drained – ¾ cup pumpkin puree – 2 tablespoons tahini – 1 tablespoon maple syrup – 1 teaspoon cumin – ¼ teaspoon black pepper – 1 pinch cayenne pepper

Heat oven to 400 F. Remove ½ inch of the top pointed end of the garlic bulb and discard.

Apply ⅛ teaspoon salt and 1 teaspoon olive oil to the garlic head. Release garlic cloves from their peels.

The garlic should be loosely wrapped in foil and baked for 30 minutes before cooling for 15 minutes.

Add roasted garlic, remaining salt, olive oil, chickpeas, pumpkin puree, tahini, maple syrup, cumin, black pepper, and cayenne pepper to a food processor.

Smoothly blend. Hummus can be served with your favorite toppings or refrigerated.
