Quick and Easy Calzone Recipe

Homemade Calzones are like portable pizza. A family favorite is homemade or store-bought pizza dough with melty ricotta and mozzarella cheeses, pizza sauce, and pepperoni.

– 1 pizza dough (1 pound/450g ball) – ½ cup pizza sauce (120ml) – 1 cup ricotta cheese (230g) – ⅓ cup pepperoni slices (44g) – 1 cup shredded mozzarella (113g) – 1 large egg – 1 tablespoon olive oil – 2 tablespoons grated Parmesan cheese

Pre-heat the oven to 475°F with the rack in the lower third. Cover a large baking sheet with parchment.

Step 1

Divide pizza dough into 4 equal pieces on a lightly floured surface. Roll each piece into a 7-inch circle (¼-inch thick).

Step 2

Apply 2 tablespoons of pizza sauce to one side of each dough round. Put 2 tablespoons of ricotta cheese, 6 pepperoni slices, and ¼ cup of mozzarella on top.

Step 3

Crimp the edges and fold the dough over the fillings to seal. Place calzone on baking sheet. Repeat with the remaining pizza dough, sauce, ricotta, pepperoni, and mozzarella, spacing each calzone on the pan.

Step 4

Mix the egg and 1 teaspoon of water in a small bowl. Use egg wash to lightly coat calzones. To release steam, cut three 1/2-inch slits in each calzone's top.

Step 5

Bake the crust for 13–16 minutes until golden brown. Apply olive oil and parmesan to hot calzones immediately. Add more pizza sauce.
