PASTA ALLA NORMA (ITALIAN EGGPLANT PASTA RECIPE)

Pasta alla Norma is the classic Italian eggplant pasta recipe made with fried eggplant and rigatoni pasta. This simple and delicious recipe is a traditional Sicilian dish full of fresh flavor. 

Ingredient

– 250g pasta (spaghetti or penne) – 2 medium eggplants, cubed – 4 cloves garlic, minced – 400g canned diced tomatoe – 1/2 cup grated ricotta salata cheese

Direction

Cook pasta according to package instructions.

In a separate pan, sauté garlic until fragrant, then add eggplant and cook until tender.
