Mediterranean Bowl With Quinoa, Hummus, And Harissa Recipe

This dish from the Mediterranean is packed full of taste and texture! It also folds up nicely and can be put together quickly with parts that have already been made. 

Ingredient

– 1 cup tri-color quinoa, rinsed – Kosher salt – 1 ½ cups hummu – Mediterranean Cucumber Tomato Salad – 4 to 6 ounces feta cheese, broken into large piece – ½ cup pitted Kalamata olive – ½ cup pitted Castelvetrano olive – Harissa (optional) – 1 cup quartered marinated artichoke heart – Extra virgin olive oil – Aleppo pepper and/or sumac (optional)

Direction

In a large pot, mix quinoa, 1 ¾ cups water, and a teaspoon of salt. Lower heat after boiling. Cover and simmer for 15 minutes until the quinoa doubles in size and absorbs the water.

Leave the quinoa covered for 10 minutes after turning off the heat while you work. Fork-fluff before using.

Divide hummus into 6 shallow dinner dishes (approximately 2 big spoonfuls each bowl). Put quinoa and salad on each side of the hummus. Fit the spaces with feta, olives, a teaspoon of harissa, and marinated artichoke hearts.

Drizzle olive oil over hummus and other items. For seasoning, add Aleppo pepper and/or sumac. Immediately enjoy.
