Marinated Mushrooms With Garlic And Thyme Recipe

Baby bella mushrooms are marinated in a robust mixture of garlic, lemon, thyme, and parsley and left to soak up the flavor like sponges. 

Ingredient

– 1 pound baby bella mushrooms – Kosher salt – 3 tablespoons minced shallots – 1 large garlic clove, minced – 2 tablespoons finely chopped parsley leaves – 1 teaspoon chopped thyme leaves – ½ teaspoon red pepper flakes or Aleppo pepper – ½ teaspoon lemon zest – 1 tablespoon lemon juice – 2 tablespoons red wine vinegar – ¼ cup extra-virgin olive oil

Direction

Put water in a pot of medium size and bring it to a boil. Incorporate a good amount of salt.

Once the mushrooms have been added, reduce the heat so that the mixture is kept at a low simmer. Prepare for five minutes, then drain well.

Put the garlic, parsley, thyme, red pepper flakes, lemon zest, lemon juice, vinegar, and a large pinch of salt in a medium-sized bowl.

Whisk the egg yolks while adding the extra-virgin olive oil slowly. Taste it and add more salt if you want it.

Mix in heated mushrooms. Cover and let settle for 15 minutes or 1 week in the fridge. Serve cold or room temperature.
