Loukoumades Recipe

Greek honey donuts (lokoumades) are made of basic dough and cooked till golden and crispy yet soft within. Finish by dipping the donut holes in homemade honey syrup and topping with nuts. 

Ingredient

– 1 cup lukewarm water – 2 tablespoons sugar – 2 tablespoons active dry yeast – 3 cups all-purpose flour – 2 tablespoons cornstarch – 1 cup lukewarm milk – 3 tablespoons extra virgin olive oil – oil for frying (I used grapeseed oil) – ⅓ cup crushed nuts, such as walnuts, cashews or pistachios) – ground cinnamon (to serve) – powdered sugar (to serve) – 1 cup water – 1 cup honey – 1 cup sugar

Direction

Mix water, sugar, and yeast in a large basin. Wait 10 minutes until the yeast bubbles and the mixture foams.Add flour, cornstarch, milk, and olive oil.

 Knead the dough for 5 minutes until smooth after mixing with a wooden spoon. Cover the bowl with plastic wrap and let it in a warm location for an hour to double the dough.

Make honey syrup as the dough rises. Add sugar and honey to 1 cup of water in a small pot. Stir and boil, then reduce heat and simmer for 20 minutes. Remove from heat and let cool.

Punch the dough to deflate when ready. Lightly grease your hands to prevent dough sticking. Form the dough into golf-size balls with your hands and place them on a large tray or sheetpan (40–60 donuts).

Pour grapeseed oil (or your choice frying oil) into a small saucepan at least ½ full. Heat oil on medium until bubbling (325 degrees F). Drain the donuts from the frying pan on a large paper towel-lined tray.

Avoid crowding the pot and delicately transfer the donut balls to the heating oil with a lightly greased spoon. Fry loukoumades for 2–3 minutes, flipping them with a spoon, until golden brown on both sides.

Use a slotted spoon to transfer the loukoumades to the paper-towel-lined pan and drain briefly before dipping them in the chilled syrup. Toss and place on a plate. Complete frying and syruping all loukoumades.

After placing all the loukoumades on a tray, sprinkle with extra syrup (or save it in a small bowl). Serve with ground sugar and cinnamon.
