Loaded Hummus With Shallots And Shishito Peppers Recipe

Blistered shishito peppers and shallots create the ideal hummus toppers in this simple recipe! Serve it with warm pita for a light vegan snack or chicken or beef for a flavorful feast!

Ingredient

– 1 homemade hummus recipe, use this recipe, or 1 pound store-bought hummu – 6 ounces shishito peppers, whole – 4 large shallots, (about 8 ounces), thinly sliced – 2 cloves garlic, minced – 1 teaspoon Aleppo pepper – 1 teaspoon sumac – Extra virgin olive oil, Spanish Hojiblanca EVOO

Direction

Heat 2–3 teaspoons extra virgin olive oil in a skillet until shimmering.Sprinkle kosher salt over the cut shallots. Include shishito peppers and minced garlic.

Unattended, cook on high for 3 minutes. Continue cooking for 3–5 minutes until the shallots and peppers are charred and blistered and softened.

Control heat to avoid burning.Add additional salt, Aleppo pepper, and sumac after turning off the heat.

Spread hummus on a platter. Create a large, shallow well in the center and pour extra virgin olive oil. Add sumac and Aleppo pepper.

Put the browned shishito and onion in the pan. You can use less if you want to, but I used it all.
