Lebanese Chicken Fatteh Dinner Bowls Recipe

These supper dishes update Lebanese chicken fatteh casserole. Spicy poached chicken with toasted pita and mint yogurt sauce in meal bowls with Lebanese rice and Mediterranean salad.

Ingredient

– 4 bone-in chicken breasts, skins removed – Salt – 1 tbsp apple cider vinegar – 2 dried bay leave – 2 cinnamon stick – 4 whole cardamom pods, lightly crushed – 6 clove – Water – Extra virgin olive oil – 1 medium yellow onion, peeled and thinly sliced – 3 garlic cloves, crushed – 1 tsp sweet Spanish paprika – 1 tsp ground sumac – ½ cup toasted pine nut – ½ cup toasted sliced almond – Fresh parsley leaves for garnish – 2 loaves Lebanese pita bread, toasted in the oven until lightly brown, and broken into chip – 1 ½ cup plain low-fat yogurt – 2 garlic cloves, crushed – ½ cup chopped fresh mint  – pinch salt

Mint yogurt sauce preparation. Add yogurt, garlic, mint, and salt to a small bowl. Use a fork to mix thoroughly. For now, cover and chill.

Make Lebanese rice according to this recipe and keep aside. Make Mediterranean salad according to directions; cover and refrigerate.

In a heavy saucepan or Dutch oven, place chicken breasts in a single layer. Salt it. Mix apple cider vinegar, bay leaves, cinnamon, cardamom, and cloves. Cover the chicken with 1 inch of cold water.

Heat the chicken pot on medium-high. Bring to boil. Remove water-surface white foam. Reduce heat to low, cover, and simmer for 15-20 minutes until chicken reaches 165 degrees F.

Cool the chicken on a chopping board after removing it from the soup with a slotted spoon.  Save the broth after straining.Remove the bones and shred the chicken into bite-sized pieces when cool.

In a big cast iron pan like this, heat 2 tablespoons extra virgin olive oil on medium. Cook onions for 4 minutes, stirring often. Add garlic and sauté another minute. Add chicken, paprika, and sumac.

Sprinkle salt and pepper. Stir to coat chicken. Cook chicken for 5-7 minutes to warm.Remove from heat and add roasted nuts. Decorate with fresh parsley.

Put toasted pita bread in dishes to serve. Optional: Lebanese chicken, mint yogurt sauce, and toasted almonds. Put cooked rice and salad next to Lebanese chicken fatteh. Enjoy!
