ITALIAN SPONGE CAKE | 3 INGREDIENTS (PAN DI SPAGNA)

Italian Sponge Cake, also known as Pan di Spagna, is a simple recipe made with just three ingredients! This fluffy cake is a classic recipe you don't want to miss!

Ingredient

1. 4 large egg 2. 120 grams (1 cup) granulated sugar 3. 120 grams (1 cup) all-purpose flour

Direction

Preheat your oven to 180°C (350°F). Grease and flour a round cake pan or line it with parchment paper.

In a large mixing bowl, crack the eggs and add the granulated sugar. Using a hand mixer or a stand mixer, beat the eggs and sugar together on high speed until the mixture is pale, thick, and doubled in volume. This may take around 5-7 minutes.

Sift the all-purpose flour into the egg mixture in small batches, gently folding it in with a spatula until just combined. Be careful not to overmix to keep the batter light and airy.

 Pour the batter into the prepared cake pan and smooth the top with a spatula. Bake in the preheated oven for 25-30 minutes, or until the cake is golden brown and a toothpick inserted into the center comes out clean.

Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely before serving.
