Easy Chicken Scampi Recipe

Make restaurant-quality Chicken Scampi in 30 minutes! This simple dish has rich creamy flavor and basic ingredients.  

– 10 ounces angel hair pasta (280g) – 1½ pounds chicken tenders (675g) – 2 teaspoons salt divided – 1 teaspoon ground black pepper divided – ½ cup all-purpose flour (60g) – 3 tablespoons olive oil – 1 red bell pepper thinly sliced – 1 green bell pepper thinly sliced – 1 yellow bell pepper thinly sliced – 1 small red onion halved and thinly sliced – ¾ cup dry white wine (180mL) – 3 tablespoons unsalted butter – 6 garlic cloves minced – ¾ cup heavy cream (180mL) – ¾ cup grated parmesan plus more for serving (60g) – Chopped parsley for garnish


Cook pasta al dente in a large pot of salted boiling water per package instructions. Save ½ cup of pasta water after draining.  

Step 1


While pasta cooks, season chicken tenders with 1 tsp salt and ½ tsp pepper. Mix seasoned chicken with flour in a large bowl. Coat and flour chicken.  

Step 2

Cook oil in a large skillet over medium-high. Shake off excess chicken flour and add to skillet. Brown and heat through in 3–4 minutes per side.   

Step 3

Take the chicken from the skillet and platter. Cover to stay warm. Chicken may not fit in the pan, so cook in batches.  

Step 4

Lightly brown and soften the bell peppers and onion in the same skillet for 5 minutes, rotating periodically. Set aside skillet contents.  

Step 5

Simmer for 2 minutes after deglazing the skillet with wine and scraping out any browned bits. Mix butter until melted. Repeatedly stir garlic till fragrant.  

Step 6

Mix in cream, ¾ cup parmesan, ½ cup pasta water, 1 tsp salt, and ½ tsp pepper. Simmer cheese until melted, stirring often.   

Step 7

Sauce should cover pasta and bell peppers. With chicken and optional parmesan and parsley, served immediately.
