Easiest Hot Chocolate Brownie Cookies Recipe

The ultimate chewy and fudgy brownie cookie prepared with hot chocolate. Hot cocoa brownie cookies have sticky marshmallows.  

– 8 oz. good quality chocolate bar, 60% or higher – ½ cup unsalted butter – ¾ cup granulated sugar – 2 large eggs  – 1 oz. packet of powdered hot chocolate mix – 2 tsp instant espresso powder – 1 tsp baking powder – ½ tsp salt – ¾ cup all purpose flour – ½ cup marshmallow creme



Heat oven to 350 F. Parchment two big baking sheets. Set aside. Make a glass or dish of water really hot.  


Heat butter and chocolate in a microwave-safe bowl for 1 minute. Stir melted butter and partially melted chocolate until blended.  


Whisk sugar and eggs in a stand mixer with the whisk attachment on medium speed until light, frothy, and pale yellow. Around 4-5 minutes.  


Slowly add melted chocolate on low. Beat the mixture into the eggs and sugar until cohesive. Scrape bowl sides and bottom.  


Add hot chocolate, espresso, baking powder, and salt. Slowly whisk until smooth and blended. Scrape bowl sides and bottom.  


Mix the flour into the hot chocolate cookie on low until entirely mixed. Scrape bowl as needed. Use a big spoon to dip into hot water.   


Get a hefty tablespoon of marshmallow creme. Put creme in brownie/cookie batter. Gentle swirling creates a marbled effect.  


Scoop 3–4 large cookies with a large cookie scoop. Place cookie dough on baking sheets. Leave 2-3 inches between cookies.  


Repeat swirling and scooping until dough/batter is gone. Bake the cookies on the centre rack for 10-14 minutes to firm the edges.  


This takes 10-15 minutes. Use a spatula to remove the cookies from the parchment paper, place them to a cooling rack, and enjoy!
