Delicious Tandoori Chicken Recipe

Tandoori Chicken using a homemade spice marinade adds deep flavor to chicken thighs or drumsticks. For Indian restaurant-style, serve with rice and lemon wedges. Includes grill and oven instructions!  

– 2 tablespoons vegetable oil – 1 tablespoon garam masala – 1 tablespoon paprika – 1 teaspoon ground cumin – 1 teaspoon ground coriander – 1 teaspoon ground turmeric – 1 teaspoon red chili powder – 1 cup plain yogurt (228g) – 2 tablespoons fresh lemon juice – 2 tablespoons minced ginger – 6 garlic cloves minced – 1 teaspoon salt – ¼ teaspoon ground black pepper – 8 chicken pieces skinless bone-in (thighs and drumsticks, or 4 quarters) – Cilantro and lemon wedges to serve


Heating oil in a small skillet over medium heat. Add garam masala, paprika, cumin, coriander, turmeric, and chili powder.

Cook 1 minute, stirring constantly, until aromatic. Allow the spiced oil to cool for 15 minutes in a big bowl.  

Step 2

Mix yogurt with seasoned oil. Mix in lemon juice, ginger, garlic, salt, and pepper.  

Step 3

Every chicken piece should have 3 deep gashes to the bone. Stir the yogurt mixture into the chicken pieces to coat. Cover and chill 6 hours or overnight.  

Step 4

Heat the grill to 400°F. Use tongs to lightly lubricate grill grates with a vegetable oil-soaked paper towel.  

Step 5

Shake off excess marinade and grill the chicken. Cover and cook until one side has dark char marks, 10 minutes.   

Step 6

Turn the chicken carefully and simmer covered for 15 minutes until done. Serve after 5 minutes of rest. Serve with lemon wedges and cilantro.
