Delicious Lemon Poppy Seed Bread With Glaze

This quick and easy poppy seed lemon bread has bright lemon flavor from fresh lemons, nutty poppy seeds, and a sweet lemon glaze.  

– 1 ¾ cup all-purpose flour – 1 cup white sugar – ½ cup buttermilk – 3 tablespoon lemon juice – Lemon zest from 2 large lemon – 3 large egg – 1 ½ teaspoon baking powder – ¼ teaspoon baking soda – ¼ teaspoon kosher salt or sea salt – 1 ½ tablespoons poppy seed – ⅔ cup vegetable oil

Set the oven temperature to 350 degrees Fahrenheit. Lightly dust an 8-inch bread loaf tin with flour and brush it with butter.

Mix lemon zest and sugar in a large bowl or stand mixer. Mix well to release lemon zest aromas.

Add eggs and whisk until fully combined. Mix in buttermilk, 3 tablespoons lemon juice, and poppy seeds.

In a separate bowl, mix flour, baking powder, soda, and salt. Mix dry ingredients into wet ingredients in batches until well combined.

Pour batter into prepared cake pan and bake for 55-60 minutes or until a toothpick inserted into the center comes out clean.

Due to the fact that oven times can vary, I suggested checking the bread somewhere between the 45 and 50 minute mark.

Make the glaze in a small bowl and pour it over the cooled lemon loaf. Serve and relish.
