CRANBERRY ALMOND BISCOTTI (CLASSIC ITALIAN RECIPE)

Cranberry Almond Biscotti, also known as cantucci,  are a classic Italian dessert treat made with dried cranberries and whole almonds. This biscotti recipe is perfect for dipping in coffee and great for any occasion! 

Ingredient

– 1 3/4 cups all-purpose flour – 1/2 cup granulated sugar – 1/2 teaspoon baking powder – 1/4 teaspoon salt – 1/2 cup dried cranberrie – 1/2 cup almonds, chopped – 2 large egg – 1 teaspoon vanilla extract – 1/2 teaspoon almond extract

Direction

Preheat oven to 350°F (175°C). Combine 2 cups of all-purpose flour, 1 cup of sugar, 1 teaspoon of baking powder, and a pinch of salt in a bowl.

In another bowl, whisk together 3 eggs, 1 teaspoon of vanilla extract, and 1/2 teaspoon of almond extract. Stir in 1/2 cup of dried cranberries and 1/2 cup of chopped almonds.

Gradually add the dry ingredients to the wet mixture until a dough forms. Divide dough in half and shape each portion into a 12-inch log on a parchment-lined baking sheet.

Bake for 25-30 minutes until lightly golden. Remove from oven and let cool for 10 minutes. Reduce oven temperature to 325°F (160°C).

Slice the logs diagonally into 1/2-inch thick pieces. Place them cut side down on the baking sheet and bake for an additional 10-15 minutes until biscotti are crisp and golden. Enjoy!
