Chai Cake Recipe

This chai cake has layers of chai spicy cake. It has pumpkin frosting inside. They taste like a chai pumpkin spice latte when mixed together.

Ingredient

– 3 ½ cups All-purpose flour – 2 teaspoon Baking powder – 1 teaspoon Baking soda – 1 teaspoon Salt – ½ teaspoon Cardamon – ½ teaspoon Ground clove – 2 teaspoon Ground cinnamon – 1 ½ teaspoon Ground ginger – ½ teaspoon Pumpkin pie spice – ¼ teaspoon Ground nutmeg – ⅛ teaspoon Black pepper – 1 cup Unsalted butter room temperature – 1 ½ cups White granulated sugar – 2 teaspoon Pure vanilla extract – ¼ cup Sour cream room temperature – 4 Large eggs room temperature – 1 cup Buttermilk room temperature – 2 cups Unsalted butter room temperature – ¾ cup Pumpkin puree blotted – 6 cups Powdered sugar sifted – 1 teaspoon Pure vanilla extract – 1 ½ teaspoon Ground cinnamon – ¼ teaspoon Ground nutmeg – ½ teaspoon Salt

Direction

Preheat the oven to 350°F. Spray two 8-inch cake layers with nonstick baking spray. Spray again and line pan bottoms with 8-inch parchment circles.In a medium bowl, combine all-purpose flour, baking powder, baking soda, salt, cardamom, cloves, cinnamon, ginger, pumpkin pie spice, nutmeg, and black pepper.

Mix butter and sugar on high for 3 minutes. Stir in sour cream and vanilla. Mix eggs one at a time on medium speed.Pour batter equally into two cake pans.

Bake until toothpick inserted comes out clean, 25-30 minutes.Let cakes rest in heated pans for 10 minutes. Transfer to a cooling rack. Before decorating, let cakes cool fully.

Sift powdered sugar into a large basin. Spread paper towels on the counter. Mix in pumpkin puree and press out some liquid over the sink.

Mix butter on high for 3 minutes. Scrape bowl and add half powdered sugar. Slowly mix. Add the remaining powdered sugar and mix barely.Add pumpkin puree, vanilla, cinnamon, nutmeg, and salt. Mixing fast until creamy.

Cut cake domes using a serrated knife.After placing the first cake layer, apply 1 ½ cups of frosting. Place the second cake on top. Cake bottoms should face up.Cover the cake with light icing. Freeze 15 minutes.Finish frosting the cake.
