Carrot Cookies 

Eggless Carrot Cookies are the perfect treat. Full of nutrients and flavor! You'll grab a tasty cookie for each hand and want more.

– 5 tablespoons unsalted butter  – ½ cup granulated sugar + 1 tablespoon for sprinkling the cookie – 1 ⅔ cup all purpose flour – 1 cup finely grated carrots  – 1 teaspoon baking powder – 1 teaspoon pure vanilla extract – ¼ teaspoon ground cinnamon – 1 pinch of kosher salt

Start with a 350-degree oven. Line a cookie sheet with parchment. In a large bowl, mix butter, salt, sugar, cinnamon, and vanilla.

Add grated carrots to bowl and stir. Using a fork simplifies mixing. A separate bowl for sifting baking powder and flour.

After mixing the batter, gently knead it on a floured surface. Avoid overworking dough. Roll the dough with a pin.

Sprinkle 1 T sugar on the dough and roll the rolling pin over it to secure it. Eliminate. Punch 3-inch circles with a cookie cutter.

Repeat rolling and cutting the dough using the cookie cutter. 16 cookies should result. To secure carrot pieces on cookie sides, press them.
