Baked And Glazed Honey Shallot Chicken Recipe

It's fair to criticize chicken, especially overcooked, dried-out, and unseasoned breast. There are other types of chicken, and a good marinade can improve them.

– 4-5 bone-in chicken thigh – 1 cup honey – ½ cup soy sauce – ¼ cup orange juice – 2 tablespoons Dijon mustard – 2 tablespoons butter, melted – 1 shallot, minced – ¼ teaspoon salt – ¼ teaspoon pepper



Mix the honey, soy sauce, orange juice, Dijon mustard, melted butter, minced shallot, salt, and pepper in a medium bowl.

Reserve about ½ cup of marinade in a small bowl or measuring cup. Refrigerate covered. Cover chicken with remaining marinade.

Rotate the chicken once while marinating. Heat oven to 400 F. Prepare a baking sheet with foil or parchment.

Discard remaining marinade in bowl. Bake until the skin is golden brown and a thigh thermometer reads 165 F, 40–45 minutes.

Boil then simmer 10 minutes until thickened. Brush glaze on baked chicken. Plate, garnish with scallions, and serve.
